Lemon Curd

Two things make a lemon tart amazing - the perfect pastry and a tangy, luscious, creamy curd. Lemon curd sounds very simple to make. It’s made like a custard, using freshly squeezed lemon juice, some zest for additional flavour, sugar, butter, and eggs. However there's no limit to the variations.

Lemon Curd

Ingredients

CSR Raw Sugar 50g
1 Whole Lemon Zested
Lemon Juice 100ml
Egg Yolks 100g
Butter 150g

Method

Cut the butter into cubes then zest the lemon over the butter.

Bring the juice to the boil in a saucepan.

Whilst it is heating, in a bowl whisk the sugar and egg yolk.

Pour the warm lemon juice onto on the butter and zest. Then add the egg and sugar mixture.

Whisk quickly and constantly over a gentle heat until it forms a curd. Cool down before use
