Cream Cheese Scroll

These scrolls are super soft, just about melting in your mouth, and the sweet cream cheese icing covering the surface is the perfect amount: just enough to feel like a treat without being sickly.

  • Cooks in 30 minutes + resting

Ingredients

Brioche Dough

Flour 250g
CSR Caster Sugar 15g
Salt 2.5g
Water 60g
Milk 60g
1 Egg
Yeast 5g (Instant)
Butter 75g

Cinnamon Butter

CSR Brown Sugar 80g
Butter 50g
Cinnamon 7g

Cream Cheese Icing

Cream Cheese 200g
CSR Caster Sugar 200g
Butter 100g

Method

Scroll

Step 01

Mix all ingredients except butter into a mixing bowl with a dough hook.

Step 02

Mix for 10-15 minutes until not so sticky.

Step 03

Add butter in 2 lots.

Step 04

Pack into a large bowl and allow to double in size.

Step 05

Refrigerate for 6 hours or overnight.

Step 06

Allow 60-80g per portion. Bake at 180°C until golden. Approximately 10-15 minutes.

Cream Cheese Icing

Cream with mixer until smooth and light.
